What travels well in the morning, and what does not

Morning food has a shorter honest shelf than evening food. Custard-filled pastry sags within ninety minutes of leaving a fridge. Cut melon and berries weep after about three hours and wet everything beside them. Avocado browns visibly by the second hour. Scones, tartlets, cured items, whole fruit, firm cheeses, loaf cakes and anything baked dry hold their appearance for a full four-hour window, which is why a table planned for a long shower leans on them and keeps the fragile items for the second wave.

Quantities that actually work

For a two-hour brunch where the table is the meal, plan eight to ten pieces per guest across the categories, weighted towards the savoury anchors. For a shower with lunch happening afterwards, five to six pieces is right and the pastry count comes down. Below twenty guests, fewer categories done generously beats many categories done thinly, because a small table with nine sparse groupings reads as picked-over before anybody has touched it.

Baby showers and bridal showers

A shower runs two to three hours with a programme somewhere in the middle, so the food has to be edible one-handed while something is happening at the front. Portions stay small, nothing needs cutting, and the sweet moment sits on its own surface so the cake is photographed against a table that is still tidy. Afternoon tea quantities

Plan four to five finger sandwiches, one to two scones and three to four sweet pieces per guest for a full afternoon tea running two to three hours. That is deliberately heavier than a shower brunch, because afternoon tea replaces a meal for most guests. Three to four loose-leaf options is the working number: one black that takes milk, one green or white, one herbal, and a seasonal fourth if the guest list is large.

Afternoon tea wants a plate, a cup and a surface for each guest, so it works best seated and turns awkward the moment guests are asked to juggle three courses standing. After that the shopping list is set: numbers can still rise, and the count stops coming down. Every figure is quoted plus applicable taxes.

Can you work around a cake we have ordered?

Yes, and it is common. Tell us the cake size, colour and where it is coming from, and we design the surrounding table so the cake reads as the centre of it.

Do you provide the tiers, teapots and cups for afternoon tea?

Serving pieces and tiers come with us. Cups and teapots depend on the count and the room, so we confirm what is coming from where with the quote rather than assuming your cupboard covers twenty people.

Is high tea seated or standing?
